Turkey: Kiddoc's Tomato Sauce

one package Jennie-O extra lean ground turkey breast
one 28 oz can no-salt tomato sauce
one 28 oz can no-salt tomato puree
one can no-salt tomato paste
about 2 - 3 cloves of garlic
1 cup chopped onion
1 cup sliced mushrooms
Oregano
PARSLEY!!
Peppercorn Blend (I am loving this stuff, all different kinds of peppercorns in a little grinder-- has a little spicy kick)
sundried tomatoes (I found some packaged with no salt added and already "juliennne style" so no chopping)
2 tablespoons white wine *optional*
2 tablespoons no-salt chicken broth *optional*Recipe
The extra lean turkey breast has really no fat or liquid to it, so it scalds easily unless you add a little something. I have cooked it in 1/4 c. of water, but I like the flavor better when I cook it in the wine/chicken broth blend.
Cook turkey breaking apart with spoon as needed in wine and broth until browned thoroughly. Add onions, mushrooms, garlic, and spices and mix thoroughly while heating over medium heat until onions are cooked (they'll turn transparent). Add sauce, puree, and paste and stir well. (At this point, I added more of each of the spices as well). Add about 3 oz. of sundried tomatoes and stir in. Reduce heat to low and simmer 25 - 35 minutes, stirring frequently, until desired consistency. Makes 8 ~ 1 cup servings.
