Turkey: Lemon Turkey Cutlet

slice raw turkey breast into 1/4-1/2 inch cutlets
heat a non-stick pan, then place turkey in pan
sprinkle with Mrs. Dash lemon pepper
"brown" turkey on each side approx. 3-4 minutes (add water to pan if needed to keep from burning/sticking)
(be sure to put lemon pepper on both sides)
in small bowl, squeeze juice from 1 lemon
add 2 Tbs. Balsamic vinegar
1 tsp ground mustard
fresh parsley
add this sauce to turkey plus 1/4 C water, lower heat & simmer approx. 5-7 minutes
I usually serve this with rice. I pour the "drippings" from the pan over the rice like a soy sauce. For the veggie, make a huge salad with lots of fresh veggies & top with lemon juice or rice vinegar for a dressing
