Turkey: Meatloaf Cake

1 pkg. ground turkey (about 1.25 lbs)
1 egg white
2-3 T no sodium tomato sauce (can use barbeque sauce if you've made some)
1 t chili powder
1 t paprika
1 t garlic powder or granules
1/2 t ground thyme
1/2 t onion powder
1/8 t ceyenne pepper
Chopped onion, pepper, carrot, zuchinni - optional
4 large potatoes
1 bulb roasted garlic
dash white pepper
1/2 - 1 C low/no sodium chicken broth

Combine turkey, egg white, tomato sauce, spices and chopped veggies. Divide into half and pat down into 2 9" cake rounds. Bake at 350 F for about 25 minutes or until done. NOTE: cooking time is reduced because meatloaf is thin.
While meatloaf is cooking, boil, bake or steam potatoes. Drain - if boiled - and add roasted garlic, white pepper and enough chicken broth to whip into fluffy mashed potatoes.
Assemble cake. On flat surface carefully place one meatloaf cake. (be careful - they are thin and will break) "Frost" top of meatloaf with 1/3 of the mashed potatoes. Place 2nd meatloaf cake on top and frost top and sides with remaining mashed potatoes. (don't forget the swirls!) Place grape tomatoes on top for decoration.
