Turkey: Mock Mashed Potato Pot Pie

List of Ingredients
* 2 cups prepared mashed potatoes (prepared without salt, dairy, or fat)
* 1/2 medium onion, chopped
* 4 garlic cloves, chopped
* vegetable broth
* chopped fresh mushrooms
* 1 large tomato, chopped
* 8 oz shredded, cooked turkey breast (or chicken breast)
* no-salt curry seasoning
* dash chili powder
Recipe
Line four custard cups, each with just under 1/2 cup of mashed potatoes. Reserve remaining potatoes for top of pies.
Simmer onion and garlic in vegetable broth until onion is tender. Add fresh mushrooms, tomato, and turkey. Simmer, seasoning with curry and chili powder.
Split filling evenly between 4 custard cups. Seal the tops with the remaining mashed potatoes. Put the cups in a pan of water and bake at 350 degrees until heated through, about 15-20 minutes.
