Turkey: Orange Rosemary Turkey

4 boneless skinless turkey breast cutlets
1/4 cup orange juice
2 teaspoons dried rosemary, crumbled
1 large clove garlic, minced
ground black pepper
1 teaspoon finely chopped fresh parsley Recipe
Use a meat mallet ot flatten the turkey cutlets to 1/4" thickness. In a nonaluminum 12x8" baking dish, combine the orange juice, rosemary and garlic. Add the turkey and turn to coat both sides. Cover and refrigerate for 1 hour, turning the turkey once during this time.
Preheat the oven broiler or prepare a charcoal grill. Coat a broiler pan or bbq the grill rack with nonstick cookign spray. Remove the turkey from the marinade; reserve the marinade. Broil or grill the turkey 4" from the heat, basting once with the reserved marinade, for 2 minutes, or until lightly browned at the edges.
Turn and cook, basting once witht he reserved marianade, for 2 minutes, or untilt he turkey is no longer pink in the center when tested withthe point of a sharp knife. Discard any remaining marinade. Season to taste with pepper and sprinkle with parsley.
