    Turkey: Roasted Turkey Breast

    List of Ingredients




    1 (3 lb) fresh turkey breast
    ½ cup chicken broth
    1 Tbsp dried rosemary*
    1 tsp dried thyme leaves*
    1 tsp dried oregano leaves*
    1 tsp garlic powder
    ¼ tsp black pepper

    *Instead of adding these herbs seperately, I used a Rosemary Blend I purchased from Pampered Chef and it's delicious!

    Preheat oven to 350 degrees. Rinse the breast and pat dry. Place in a shallow baking dish. Add the broth and enough water to come up to ½ inch in the dish (I ended up making 1 cup of sodium free chicken stock and used it all plus a bit of water). Sprinkle the rosemary, garlic powder, thyme, oregano, and pepper all over turkey. Bake for 1 – 1 ½ hours or until the internal temperature is 170 degrees on a meat thermometer. Remove skin before serving.

    Makes 8 servings.

    This could be used for any of your 2oz protein needs and it's a lot tastier than the stuff you buy from Boar's Head or deli, and better for you too since you control the salt!!
