Turkey: Sauteed Turkey in Orange Sauce

2 tbl finely ground oat flour
1 lb turkey cutlets (turkey breast slices) pounded thin
1 tbl olive oil (or use cooking spray for this step)
1/3 cup sliced green onions, white part only
1 lrg garlic clove thinly sliced
3/4 cup fresh orange juice
1 tbl low-sodium soy sauce (off plan ingredient)
1 tbl sesame oil (off plan ingredient)
1/4 cup sliced green onion tops
Freshly-ground black pepper to tasteRecipe
* Dredge turkey cutlets in flour, shake off excess, and season with pepper.
* Heat olive oil in a nonstick skillet on high heat. Add turkey cutlets and cook until lightly browned, about 3 minutes per side. Transfer turkey to a plate.
* Reduce the heat under skillet to medium and add the white part of green onions and garlic, cook about 2 minutes. Add orange juice and soy sauce, bring to a boil and cook until slightly thickened, about 3 minutes. Stir in sesame oil and season with pepper.
* Return turkey to the skillet and simmer just until turkey is heated through, about 2 to 3 minutes. Transfer turkey to serving plates, spoon the sauce on top and sprinkle with green onions.
