    Turkey: Spinach Spaghetti Sauce

    From member monke: This can be served over rice, rice noodles or try zucchini that has been peeled and thinly sliced and steamed (think lasagna!). You can easily leave the turkey out and serve over any other protein or on a potato.

    List of Ingredients




    * 1 lb ground turkey cooked
    * 1 medium onion, chopped
    * 1/2 bell pepper, chopped
    * 4 cloves garlic, minced
    * 4 oz mushrooms, chopped
    * 2 packages fresh baby spinach, chopped
    * 28 oz can pureed tomatoes (no salt added)
    * 8 oz can tomato sauce (no salt added)
    * 2 tsp italian blend herbs or to taste
    * chicken broth (use just enough chicken broth to keep vegetables from sticking until the onions started to sweat.)

    Remove stems from spinach, chop well and cook separately. Cook ground turkey, set aside. Cook onion, pepper, garlic (this is when you may need to add a little chicken broth or water) When the vegetable are soft add the turkey, tomatoes, spinach (I drained well before using) and Italian blend herbs. Simmer and stir often until flavors incorporate.
