    Turkey: Sweet & Sour Meatballs

    Hawaiian Sweet and Sour Sauce

    8 oz can of no salt added tomato sauce
    6 oz unsweetened pineapple juice
    ¼ cup of white vinegar
    1 TBSP Splenda
    3 tsp Arrowroot powder

    Pour over browned meatballs or chicken in skillet – no lid…let simmer until meat is cooked through and sauce is thickened. Serve with rice.

    Here is the recipe I use to make the meatballs. It wouldn't matter what meatball recipe you use. This recipe makes a great meatloaf too! You could make it up and use half for a loaf of meatloaf...and the other half of the mixture to make the meatballs. Voila! Two dinners in one.

    Turkey Meatloaf with Zucchini

    2 tsp onion powder
    1 tsp garlic powder
    3 tsp italian seasonings
    4 egg whites
    1 tsp black pepper
    2 TBSP dried parsley
    1/2 cup of no salt added tomato sauce (additional can will be needed for the tops, but is optional)
    1 cup of water
    2-2/12 cups of shredded zucchini

    3.75 pounds of ground turkey. (I used 2.5 pounds of lean 93/7 ground turkey and 1.25 pounds of ground turkey breast. You could use some 93/7 beef too.)

    Mix all ingredients in a large bowl and cover...I let mine sit overnight to soak up all of the moisture and flavors. Pull out next day and mix again. Place into two large loaf pans, pour 1/2 can of no salt added tomato sauce over the top of each loaf mixed with a little bit of sweetener. Bake in 400 degree oven approx. 1 hour and 15 minutes. Since this is mostly meat...I just weighed my portions slighty over after it was cooked.
