Turkey: Sweet & Sour Turkey 2

1 large onion, coarse chopped
1 green bell pepper, cut in 1" pieces
2 carrots, sliced
1 clove garlic, minced
1 pound boneless skinless turkey breast cut 1/2" cubes
1 1/2 tablespoons cornstarch (off plan ingredient)
3 tablespoons white wine vinegar or cider vinegar
3 tablespoons packed brown sugar (or brown sugar twin)
2 tablespoons water
2 teaspoons low sodium soy sauce (off plan ingred.)
20 ounces pineapple chunks in juice Recipe
Coat a large nonstick skillet with nonstick cooking spray. Warm over medium heat. add the onions, peppers, carrots, and garlic. Cover and cook, stirring occasionally, for 6-8 minutes, or unitil the onions are golden. If needed, add 1-2 tsp water to prevent sticking . Remove from pan.
Add the turkey to the skillet. Cook over medium heat, stirring occasionally, for 3-4 minutes, or until no longer pink. Place the cornstarch ina medium bowl. Add the vinegar and stir to dissolve the cornstarch. Add the brown sugar, water and soy sauce; stir to dissolve the brown sugar.
Drain the pineapple, reserving 3/4 cup of the juice. Set aside the pineaple. Add the juice to the bowl and stir the mixture into the skillet. Cook, stirring for 1-2 minutes or untilt he mixture thickens. Stir int he pieapple and the reserved onion mimxture. Cook for 1 minute to heat.
Notes: for a bit of spicy heat, stir in 1/4 tsp crushed red pepper flakes just before serving. Serve with cooked white or brown rice.
