Turkey: Turkey Breast in a Roaster

I bought an 8lb Jennie-o breast of turkey, filled my roaster 1/3 with water. ÊAdded a lot of garlic, red pepper, fresh ground pepper, italian spices... whatever I had in my spice cabinet. ÊI stirred the spice mixture up, and took my turkey injector syringe and injected the breast all over with this solution. ÊThen I let it marinade in the fridge while I slept (breast side face down). ÊI baked it for 3 hours (350 degrees, covered), and this was the best, low-sodium, juicy turkey breast I have ever had. Ê
