Turkey: Turkey Cutlets with Lemon Sauce

2 tbl oat flour
1/4 tsp paprika
(original recipe calls for 1/2 tsp salt)
1/8 tsp pepper
1 lb turkey breast cutlets, cut in 4 equal parts (pieces)
2 tsp olive oil (or use broth or cooking spray)
1/2 cup dry white wine
2 tbl lemon juice
1/2 cup low-fat, lower sodium chicken broth
Recipe
* Combine the flour, paprika, salt and pepper on a plate. Dredge the turkey cutlets in the mixture. Heat the oil (or use cooking spray or broth) in a large nonstick skillet over medium heat, add the turkey and cook 4-5 minutes on each side, or until golden and cooked through.
* Remove them from the pan.
* Add the wine, lemon juice and chicken broth to the pan and boil until it thickens, and becomes somewhat syrupy.
* Return the turkey to the pan for a moment just to reheat it. Serve the turkey with the capers and sauce spooned over the top.
