    Turkey: Turkey Meatballs

    1 lb. ground turkey
    2 egg whites
    2 Tbsp. finely chopped onions
    1 small can tomato sauce
    1 can sodium free fat free chicken broth
    1/4 tsp pepper
    1/2 tsp oregano

    Mix the turkey, egg whites, onions, 1/3 of the can of tomato sauce, pepper, and oregano all together in a bowl. Roll into balls.... it is a really wet mixture, so just do the best you can. I made 16 balls... each a little over 1 oz, but after cooking they are pretty close to 1 oz each. Set them into a pan. Add the rest of the tomato sauce, 1/2 can of chicken broth, and some water until the liquid comes 1/2 the way up the meatballs.

    Put on stove on high until the liquid is boiling. DO NOT STIR or the balls will fall apart. Cover, lower temperature and simmer for around 45 minutes. After the first 20 minutes you can turn them or stir them and they won't fall apart.
