    Turkey: Turkey Meatloaf

    From member GiselaT: I found the Turkey Meatloaf Recipe very bland, so I modified it a little and it is GREAT. I shared this with some of my friends on the program and they said it was a definite improvement. Try it, you may like it too.

    List of Ingredients

    * 2 lbs ground turkey
    * 1 cup onion, finely chopped
    * 1 cup celery, finely chopped (celery has a lot of natural salt)
    * 1 cup finely chopped mushrooms
    * hot peppers, sliced
    * 1/2 to 1 cup chopped fresh cilantro
    * tomatoes, diced into small pieces
    * 2 egg whites, beaten till frothy
    * fresh ground black pepper
    * paprika
    * 1/2 cup cooked rice
    * pineapple slices, cut about 1/2 inch thick

    Recipe

    To egg white add some paprika and ground pepper,mix well. Mix all ingredients above with meat, except pineapples, add egg mixture. Mix well with a wooden spoon and form into a loaf in your loaf pan. Bake uncovered in oven for 1 hour @ 350¡, frequently draining out any excess fat. Remove from oven after 1 hour and arrange pineapple pieces on top and along sides of loaf. Bake for another 15 to 25 minutes.

    Note from another poster: That was the best meatloaf I have ever made. I made one change, instead of putting the tomato paste on top I mixed it right in.That made it very moist and juicy.
