List of Ingredients
18 ounces boneless skinless turkey fillets
1 medium onion, diced
2 cloves garlic, minced
1 1/2 cups no salt added crushed tomatoes (canned)
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh thyme
1 tablespoon capers (rinsed)
1/2 cup minced fresh parsley
Recipe
Heat a large skillet coated with cooking spray over medium-high heat. Add turkey fillets and saute on each side for 4 minutes. Remove from the skillet. In same skillet, saute the onion and garlic for 5 minutes until onions begin to brown. Add the tomatoes. Bring to a boil, lower heat and simmer for 5 minutes. Add turkey, rosemary, thyme and capers. Simmer over low heat for 10 minutes. Add parsley and serve. Makes 8 (2 oz.) portions of Protein B
