Turkey: Turkey Sausage Lasagna

Spaghetti Sauce:
2 cans NSA diced tomatoes
2 bay leaves
3 cloves garlic, crushed
Combine sauce ingredients, bring to a boil. Reduce heat to low and simmer for 15 minutes. Set asside.
Turkey Sausage:
20 oz extra lean ground turkey breast
1/2 t black pepper
1/4 t cayenne pepper
1/4 t mace
1/4 t paprika
1/2 t rubbed dalmation sage
1 t thyme
Combine all ingredients for sausage and cook over medium high heat in a non stick skillet until browned. Set asside.
1 onion, diced
1 pint mushrooms, sliced
1 bag baby spinach
1/2 c fresh basil, chopped
In nonstick skillet, cook baby spinach and basil(no need to add water) over medium heat until wilted. Set asside.
In nonstick skillet, cook onions and mushrooms until onions are opaque. Set asside.
Cook rice lasagne noodles according to package instructions to al dente state.
In 9x13 nonstick pan, spread thin layer of sauce over bottom. Then layer noodles, sauce, spinach mixture, onion mixture, and sausage. Repeat ending with layer of noodles covered in sauce and sausage. Cover in aluminum foil. Cook at 350¡ for 45 minutes. Let sit for 10 minutes before serving.
