    Turkey: Turkey Sausage & Mushroom Hot Dish

    List of Ingredients

    1/2 pound Honeysuckle White Sweet Italian Sausage, casings removed (or use homemade turkey sausage meat)

    1 package (8 oz.) sliced mushrooms
    1 - onion, chopped
    1 - green pepper, chopped
    1 cup Arborio or regular rice, not instant
    2 cups reduced-sodium chicken broth
    1/2 tsp. freshly cracked pepper

    Recipe

    Slice sausages open with a sharp knife and remove casings (or use your homemade turkey sausage mixture). Spray a large saucepan with non-stick spray; heat over medium-high heat. Add the sausage, mushrooms, onions and green pepper, breaking up the sausage with a fork. Cook until the sausage is browned and the vegetables are tender, about 8 minutes. Add the rice, stirring to coat. Add the broth and ring to a boil. Cover, reduce the heat and simmer until the broth has evaportaed and the rice is tender, about 20 minutes. Season with black pepper and serve.
