Turkey: Turkey Teriyaki Kebabs

List of Ingredients
1 pound boneless skinless turkey breast
2 tablespoons low sodium soy sauce
2 teaspoons grated frsh ginger
2 teaspoons sugar or splenda
1 large clove garlic, minced
8 large button mushrooms
1 medium eggplant, cut into 16 cubes
16 snow peas
4 scallion, cut into 4 pieces each
16 yellow pear tomatoes or cherry tomatoes Recipe
If using wooden skewers, submerge 8 long ones in cold water for 30 mintues. Cut he turkey into 1" cubes. In a medium bowl, combine the soy sauce, ginger, sugar and garlc. Add the turkey and mushrooms. Cover and refrigerate for 20 minutes, stirring occasionally.
Bring a medium saucepan of water to a boil. Add the eggplant; cook for 2 minutes. Add the snow peas and scallions; cook for 1 minute. Drain, then plunge the veggies into a big bowl of ice water. Let stand for 30 sconds; drian and pat dry.
Preheat the oven broiler or prepare a charcoal grill. Divide the turkey, mushrooms, eggplant, snow peas, scallions, and tomatoes among 8 skewers. Brush ell with the marinade; reserve the marinade.
broil or grill 4" from the heat for 2-3 minutes. Turn the skewers and brush withthe marinade. Cook for 2-3 minutes, or until the turkey cubes are no longer pink in the center when testedwith the point of a sharp knife. Discard the remaining marinade.
Note: serve with rice and crisp steamed asparagus or broccoli.
