Turkey: Turkey & Rice One Pot

1 chicken boullion cube *I used the Wylers No Sodium Instant Boullion, or you could use Herb-Ox, or Low-sodium chicken broth
1 tablespoon Soy Sauce *I used Pearl Bridge Low Sodium Soy Sauce, only about 2 tsp.
1/8 teaspoon pepper
vegetable oil cooking spray *didn't use any
1/2 pound ground turkey
1 medium onion, chopped
1 clove garlic, minced
1/2 cup Sushi Rice
1/4 pound mushrooms, thinly sliced
1/4 cup minced parsley Recipe
Dissolve boullion cube in 1 1/3 cups of water (or use this amount of broth.) Mix in Soy Sauce (optional)
Heat a large frying pan over high heat. Add ground turkey, saute until browned. Add onion, garlic and pepper saute 1 minute longer Mix in rice, mushrooms, and boullion mixture. Bring to a Boil, reduce heat to low. Cover and simmer for 20 minutes or until liquid is absorbed. Stir in parsley and remove from heat. Let stand for 10 minutes covered before serving.
This should make 4 servings with 1/2 carb and 1.5 oz of ground turkey. The other option is to remove the turkey after cooking it (but leave the drippings, onions in pan.) Then cook rice in the skillet as directed. Then you can add your turkey measured properly to your plan to the rice mixture.
