Turkey: Vegetable Spaghetti w/ Meatballs

1 1/2 c. sliced fresh mushrooms
1/2 c chopped onions plus 2 T finely chopped onion
1/2 c chopped green bell pepper
2 cloves garlic, minced
2 cans (14 1/2 oz ea) no salt added stewed tomatoes
1 can (6 oz) no salt added tomato paste
2 1/2 t dried Italian seasoning
1/4 t black pepper
1 egg white
2 T oat flour
16 oz ground turkey
4 c cooked rice pasta ( I prefer the pad thai rice noodles)Recipe
Preheat oven to 375°F. In a large saucepan, saute mushrooms, 1/2 c chopped onion, bell pepper and garlic. Cook and stir 4-5 minutes. Stir in tomatoes with liquid, tomato paste, 2 t Italian seasoning and black pepper. Bring to a boil over medium-high heat. Reduce heat to medium-low. Cover and simmer 20 minutes, sitrring occasionally.
Combine egg white, oat flour and remaining 2 T finely chopped onion and remaining 1/2 t Italian seasoning in medium bowl. Add turkey; mix until well blended. Shape to form 16 meatballs. Place in 11x7" baking pan. Bake 18-20 minutes or until browned. Drain on paper towels.
Stir meatballs into sauce. Return sauce to a boil; reduce heat. Simmer, uncovered, about 10 minutes more or until sauce slightly thickens, stirring occasionally. Serve over rice noodles.
