    Chicken: Chicken Tenderloins with Spicy Tomato Sauce

    List of Ingredients

    1 can (14 ounce) diced tomatoes (no added salt) with juice
    1 red bell pepper
    1 medium yellow onion
    2 cups homemade turkey or chicken stock

    Spice Mixture:
    1/4 t fenugreek
    1/4 t ground ginger
    1/4 t garlic powder
    1/4 t onion powder
    1/4 t paprika
    1/4 t white pepper
    ~1/8 t red pepper flakes, or more to taste
    (note: t = teaspoon)

    Recipe

    Mix the spices in a small dish.
    Sprinkle the tenderloins with 1/2 of the spice mixture.
    Cut the bell pepper and onion into bite-size pieces.
    Brown the chicken pieces in a non-stick skillet. Remove & set aside.
    Add the onion and bell pepper to the skillet and cook until browned in spots, but still slightly crunchy.
    Remove the veggies and set aside.
    Pour the can of tomatoes, along with their juices, into the pan.
    Cook over medium high heat, stirring often, until most of the juices evaporate.
    Stir in the remaining spice mixture and cook for a minute or two.
    Pour in the stock and boil on high until the sauce is reduced by half.
    Add the chicken and veggies back into the pan and simmer until the chicken is cooked through.

    Each chicken tenderloin is approximately 1 ounce.
