    Grains: Asian Millet with Carrots

    List of Ingredients




    1 1/2 cups water or low salt chicken broth
    1 onion, coarse chopped
    10 baby carrots, diced
    1/3 cup millet
    2 pieces fresh lemongrass (4" each) optional
    3 cloves garlic, minced
    3 scallions, chopped
    2 tablespoons chopped fresh cilantro
    2 teaspoons low sodium soy sauce
    ground back pepper

    Recipe



    In a large nonstick saucepa, combine the water or stock, onions, carrots, millet, lemongrass (if using) and garlic. Cover and bring to a boil over medium high heat. Reduce the heat to medium, cover and cook for 35-40 minutes, or until themillet is tender and the liquid is absorbed. Stir in the scallions, cilantro and soy sauce. Season to taste with the pepper. Remove and discard the lemongrass (if using).
