    Grains: Basic Millet Instructions

    Source of Recipe

    provida.com
Millet can be cooked 2 ways, either dry or moist. Dry, the grains stay separate and it's fluffy. Moist, some of the grains will split open and you can whip it into the consistancy of mashed potatos. You can also throw in into soups.

    Basic cooking instructions are:

Rinse and drain 1 cup of millet thoroughly. Lightly toast in a dry sauce pan over medium heat. Add 2 cups of water (or stock). Bring to boil, then cover and lower heat to low. Cook for 15 minutes. Remove from heat and let sit for 5 mintues more.

To make the moist variety, just add an additional 1/2 cups of water or stock if I remember correctly.
