Cook grains in water, stock or vegetable juice in a covred heavy-bottomed pot. Season if you like with herbs, spices or other aromatics. Follow the same basic method for all the following grins. bring the grain and liquid to a boil, then reduce the heat to low so the mixture simmers. Cover and cook for the alotted time. Remove from theheat aned set aside, covered, to steam for 5 minutes. fluff with a fork before serving. Remember that the time listed are approximate. The age of the grain, the weather, and the heat intensity of your stove top can all affet the amount of liquid that the grain absorbs and the time needed to absorb it.
