    Grains: Mushroom-Kale Barley

    2 1/4 cups low salt chicken broth
    1 cup uncooked pearl barley
    3 cloves garlic, minced
    1 1/2 cups sliced mushrooms
    1/2 teaspoon dried thyme
    1/4 teaspoon ground black pepper
    1 1/2 cups chopped fresh kale

    Recipe

    Bring 2 cups of broth to a boil in a saucepan. Stir in barley. Return to a boil, reduce heat, and simmer until barley is tender, about 30 minutes. Heat remaining broth in a nonstick skillet. Add garlic, mushrooms, thyme, and black pepper, and saute until mushrooms are tender, about 2 minutes. Stir in kale and saute for 1 additional minute. Stir barley into kale mixture. Toss to mix well and sere hot.
