Oats: Sweet Oatmeal Flatbread

I mixed two egg whites, 1/4 cup oatmeal ground into flour but not too fine, some splenda, little cinnamon and then 'fried' it in a teflon pan with a tiny spray of butter flavored PAM. it was thick like a pancake, not real thin, and when I ate it the texture was just like a muffin or good wheat bread. Like cake. So just because those recipes say muffin on them give them the old pancake try and see what you get, quick, good, hot.
