Oats: Poppyseed Oat Cakes

½ tsp baking soda
1/2 C Splenda
1/2 C Oatmeal
1/3 C Oat flour
1/2 tsp butter extract
1/2 tsp Maple extract
1/2 C water
1oz poppy seeds
Recipe
1. Preheat the oven to 325F.
2. Mix soda and oats well.
3. In a saucepan, heat water, Splenda, the butter extract and maple extract over a low heat (do not let the mixture boil) and then pour the liquid over the oat mixture, mixing it in with a wooden spoon.
4. When it is cool enough to handle, form the mixture into a ball on a floured surface (oat flour). Roll it out to a thickness of about ¾in and cut it into rounds.
5. Sprinkle the oatcakes with the poppy seeds and place them on a nonstick baking sheet. Bake the oatcakes in the oven for 15 minutes, or until they are golden brown. Place them on a wire rack to cool.
(whole recipe should be equal to about 2 cup cooked oats, when figuring out your portions)
