    Rice: Apple Rice Pudding

    List of Ingredients

    1/3 cup egg substitute
    2 cups apples, pared, cored and finely chopped
    1 1/2 cups cooked white rice
    1/4 cup pourable Splenda sweetener
    1/2 teaspoon gound cinnamon
    1 teaspoon vanilla extract
    2 egg whites
    1/4 teaspoon ground cinnamon

    Recipe

    Preheat oven to 325¼F. Mix together the egg substitute, apples, rice, Splenada, 1/2 tsp cinnamon and vanilla. Beat hte egg whites until stiff peaks form and then fold into rice mixture. Turn into a 1 1/2 quart casserole. Sprinkle 1/4 tsp cinnamon on top. Place casserole dish in a pan of very hot water (1 inch deep). Bake about 70 minutes. Serve warm or chilled. Makes 7 portions of1/2 oz. Protein A and 1/2 cup Carb B
