Rice: Baked Mushroom Rice

1 cups rice uncooked
1/2 cups green onions sliced, including tops
nonstick cooking spray
1/2 lb fresh mushrooms thinly sliced
1 1/2 cups nonfat chicken broth
1/2 cups dry sherry
(original recipe called for 1 tsp salt )
1/2 teaspoon freshly ground black pepper
Recipe
Preheat oven to 375 degrees. Spray a 7 x 11-inch baking dish with nonstick cooking spray, and pour in uncooked rice. In a medium saucepan, saute green onions until softened (use nonstick cooking spray or additional broth for this step). Add mushrooms and continue to saute until mushrooms are softened. Pour in chicken broth, sherry and pepper. Bring to a boil, remove from heat and pour over rice in baking dish.
Original poster's note: Tried this with beef on Saturday night. So easy, great flavor and the rice was tender and fluffy. Very much like a pilaf, but without all the fat! I did mine in a deeper casserole and it took a little longer to cook.
