Rice: Baked Rice Pudding

List of Ingredients
9 servings of egg whites (I used 1/3 cup of the carton stuff times 9)
4 1/2 cups of cooked white rice
plenty of splenda (about 5 packets per each serving of egg whites)
cinnamon to taste
Vanilla (however much you desire)
nutmeg (to line the glass baking dish)Recipe
whip the egg whites and add the splenda and a bit of cinnamon (I put too much cinnamon...don't put it in until it is brown like I did ) Add vanilla to mixture. Whip until almost peaky (the carton stuff doesn't peak like regular egg whites, which is probably for the best).
Pour into a baking dish that is sprinkled first with nutmeg. Add rice evenly to mixture (it will sink to the bottom). Cook in a preheated oven at 350 degrees until the top is slightly brown and it is cooked through (a fork inserted comes out clean). I cut it into squares that are a little over 1/2 cup (heaping 1/2 cup to account for egg whites in there??).
Smells like cake and tastes great. I think I will do cupcakes next time and add more splenda than I did (actually didn't put the amount recommended above--add a little extra in the am when I heat it up).
