    Rice: Basmati Rice w/ Spicy Kale

    List of Ingredients

    2 1/4 cups low salt chicken broth
    1 medium onion, chopped
    1 jalapeno pepper, seeded and minced
    2 cloves garlic, minced
    1 cup uncooked basmati rice
    1/2 teaspoon ground cumin
    1/2 teaspoon ground black pepper
    2 cups finely chopped fresh kale
    1/4 cup chopped fresh parsley

    Recipe

    Heat 1/4 cup of broth in a large saucepan. Add onion, jalapeno and garlic, and saute until onion begins to soften, about 4 minutes. Add remaining broth, rice, cumin and black pepper. Bring to a boil, reduce heat, coverand simmer until rice is just tender, about 15 minutes. Stir in kale and continue to simmer for 5 minutes. Drain any remaining liquid. Transfer to a large bowl, sprinkle with parsley and serve.
