    Rice: Basmati Rice with Mushrooms

    List of Ingredients

    2 1/4 cups low salt chicken broth
    1 stalk celery, chopped
    1/2 cup chopped onion
    2 cloves garlic, minced
    1/2 teaspoon dried thyme
    1/4 teaspoon ground black pepper
    1 cup mushrooms, cooked
    1 cup uncooked basmati rice

    Recipe

    Heat 1/4 cup broth in a saucepan. Add celery, onion and garlic, and saute until onion begins to soften, about 3 minutes. Add thyme, black pepper, mushrooms and rice, andstir to mix well. Add remaining broth. Bring to a boil, reduce heat, cover, and simmer until rice is just tender, about 25 minutes. Remove from heat, drain any remaining liquid, and allow to stand for 5 minutes before serving.
