    Rice: Brown Basmati Lemon Rice

    List of Ingredients

    1 cups Basmati rice, uncooked
    2 cups vegetable stock
    lemon zest from 1 lemon
    1/4 tsp ground nutmeg
    1/4 tsp ground cloves
    1/2 tsp cinnamon
    1/2 tsp ground cumin
    1/2 tsp ground coriander
    1 pinch saffron optional
    1 tbsp chopped fresh parsley

    Recipe

    Rinse the rice and soak it for 20 minutes in cold water. Drain. Add all the ingredients except for the parsley to a 2-quart pot. Bring to a boil, lower the heat, stir, and simmer, covered, for 20 minutes, or until the water is absorbed and the rice is cooked. Garnish with the chopped parsley.
