    Rice: Brown Rice Salad

    List of Ingredients

    3 cups cooked brown rice (original poster notes: I recommend Lundberg County Brown & Wild Rice Blend--available at heath food stores and some grocieries)

    5 green onions, thinly sliced
    2 small or one large tomato, seeded and diced
    2-3 ribs celery, finely diced
    1 1/2 cups diced bell pepper, assorted colors
    1 recipe No-Fat Italian dressing (see recipe)

    Recipe

    Combine all ingredients. _The Lundberg County rice is a nice, firm, large grain rice, and the vegetables should be cut small enough that a forkful of the salad has both rice and vegetables. _You could add other vegetables if you want, or for a one dish cold meal add your protein allowance. _This recipe absolutely saved me on a recent camping trip where others were eating hot dogs, etc.

    If you divide it into 6 equal portions, each one is about 1/2 cup carb--I think each serving would be about one cup total.
