    Rice: Cilantro-Jalapeno Rice w/ Spinach

    List of Ingredients

    1/4 cup low salt chicken broth
    1 medium onion, chopped
    2 cloves garlic, minced
    1 medium bell pepper, cored and chopped
    1 jalapeno pepper, seeded, minced
    2 cups water
    1 cup uncooked white rice
    1/4 cup chopped fresh parsley
    1 teaspoon chili powder
    1/4 teaspoon ground black pepper
    2 cups chopped fresh spinach
    1 teaspoon dried cilantro

    Recipe

    Heat broth in a saucepan. Add onion, garlic, red bell pepepr and jalapeno; saute until peppers begin to soften, about 5 minutes. Add water, rice, parsley, chili powder, and black pepper. Bring to a boil, reduce heat, cover and simmer until rice is just tender, about 15 minutes. Add spinach and cilantro, and continue to simmer until spinach is wilted, about 5 minutes. Serve at once.
