    Rice: Fluffy Lemon Rice

    1 lrg lemon
    (original recipe called for 1/2 tsp salt)
    1/4 tsp ground turmeric or curry powder
    1 cup parboiled rice
    1 lemon juiced
    1 lemon zest

    Recipe



    In 2 qt. saucepan over high heat, heat lemon juice, salt, turmeric, and 2 1/4 cups water to boil. Stir in rice, bring back to boil. Reduce heat, cover, and simmer 20 minutes. When rice is done, stir in grated lemon peel.

    * original poster's notes: I had leftover brown rice, so I just stirred in the lemon peel and juice and reheated in the microwave. Also, I didn't have any turmeric so I substituted curry powder.
