Rice: Hot and Sour Rice

List of Ingredients
4 cups cooked rice (brown or white)
2 Tbsp low salt tomato paste
1/4 cup rice vinegar
1/4 cup water
2 packets Splenda
3 cloves garlic-minced
1/2 tsp crushed red pepper flakes
1/4 cup scallions-finely sliced
4 cups lettuce-shredded
2 cups bean sprouts
Recipe
In a sauce pan slowly bring to a boil the tomato paste, rice vinegar, water, Splenda, garlic, and red pepper flakes. Lower heat and simmer for 5 minutes. Remove from heat. In serving bowls divide evenly in layers beginning with the lettuce, bean sprouts, and the rice. Pour an even amount of sauce over the rice in each serving bowl. Top with your choice of fresh cilantro, scallions, or lime wedges.
