    1 1/2 cups low salt chicken stock
    1 cup jasmine, basmati or long grain white rice
    1 tablespoon grated lemon rind
    1/4 teaspoon ground black pepper
    1 tablespoon chopped fresh dill (or 1 tsp dry)
    1 tablespoon fresh squeezed lemon juice

    Recipe



    In a small nonstick saucepan over medium heat, bring the stock to a boil. Stir in the rice, lemon rind, and pepper. Return to a boil; stir. Reduce the heat to low, cover and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed. Fluff the rice witha fork. Add the dill and lemon juice and mix lightly with a fork.
