    Rice: Mexican Rice

    List of Ingredients

    * 2/3 cup diced onion
    * 1-1/2 cups uncooked white rice
    * 1 cup chopped green bell pepper
    * 1 tsp ground cumin
    * 1 tsp chili powder
    * 8 oz canned no-salt added tomato sauce
    * 1 clove garlic, minced
    * 1/8 tsp powdered saffron
    * 3 cups water

    Recipe

    In a large saucepan, saute onions over medium-low heat, until golden. Add remaining ingredients, stirring well. Cover, bring to a boil, then reduce heat to simmer. Cook for 30 to 40 minutes, or until rice is tender. Stir occasionally.
