    Rice: Minted Rice

    List of Ingredients

    1 cup chopped onion
    2 1/2 tablespoons dried mint leaves
    1 cup rice uncooked
    2 cups low salt chicken broth
    additional 1/4 cup low salt broth
    1/8 teaspoon pepper

    Recipe

    Heat the 1/4 cup broth in a saucepan over medium heat until hot. Add onion and mint; saute until onion is tender. Stir in rice. Add rest of broth and bring to a boil. Cover, reduce heat and simmer 20 minutes until liquid is absorbed. Remove from heat and stir in pepper.
