Rice: Rice & Barley Pilaf

List of Ingredients
2/3 c white rice
2/3 c quick-cooking barley
2 c unsalted chicken stock
1/4 c chopped onions
1/4 c chopped bell peppers (any color or a mix)
seasonings - black pepper, mrs. dash, or whatever
Recipe
Choose a medium sauce pan that has a tight-fitting lid.
Saute the onions & peppers along with a little air (no oil!) over medium-high heat. When onions and peppers start to soften, stir in the rice and barley. Stir and cook until the rice and barley start to toast a little. Stir in the chicken stock and seasonings of your choice. Watch it like a hawk until it comes to a boil (which should be very soon), then cover and turn the heat to the lowest setting. Cook for 15 minutes without peeking (peeking lets the steam out). Let stand off heat for 5 minutes or up to about 15 while you get the rest of the meal ready. Fluff and serve.
