Rice: Rice with Shiitake Mushrooms

4 cups low salt chicken broth
1 medium onion, chopped
2 cloves garlic, minced
2 cups uncooked white rice
1/2 cup sliced shiitake mushrooms
1/4 teaspoon cayenne pepper
1/2 cup choped fresh parsley
1/4 teaspoon ground black pepper
Recipe
Bring broth to a boil in a saucepan. Add onion, garlic and rice. Return to a boil , reduce heat, coer and simmer for 15 minutes. Add mushrooms and cayenne pepper, cover and continue to simmer for 10 additional minutes, until the liquid is absorbed and the rice is tender. Transfer to a large bowl, stir in parsley, sprinkle with black pepper, and serve.
