Rice: Saffron Garlic Rice

2 cups low salt chicken or veg. stock
1/4 teaspoon crushed saffron threads
1 1/2 cups chopped leeks
2 cloves garlic, minced
1/4 cup white wine (optional)
1 cup long grain white rice Recipe
In a microwavable measuring cup or medium bowl, combine the stock and saffron. Microwave on high power for 2 minutes, or until hot. Remove and set aside for 5 minutes. Coat a medium nonstick saucepan with nonstick spray. Warm over medium heat. Reduce the heat to medium-low, cover, and cook for 20 minutes, or until the rice is tender and the liquid is absorbed. Fluff with a fork.
