Rice: Spanish Green Rice

2 cups water or veg. stock, low sodium
3/4 cup long grain white rice
3/4 cup chopped fresh cilantro
1/2 cup finely chopped scallions
1/4 cup chopped fresh parsley
1/2 teaspoon finely diced jalapeno peppers (wear plastic gloves while handling) Recipe
In a medium nonstick saucepan, combine the water or stock and rice. Bring to a boil over medium high heat. Reduce the heat to medium low,m cover and cook for 20 minutes, or until the rice is tender and the liquid is absorbed. Fluff the rice with a fork. Add the cilantro, scallions, parsley and peppers (if using). Stir with a fork.
