Rice: Spicy Southwest Rice

1-2 tablespoons chicken stock
2 cups uncooked brown or white rice
1/2 medium red onion, chopped
2 spring onions, sliced thinly
3 cloves garlic, minced
1 or 2 green chili peppers (such as jalapeno, serrano, etc.), chopped
1 – 2 medium tomatoes, diced (or 1/2 to 1 can NSA canned tomatoes)
1/4 cup cilantro, chopped
Chili powder, to taste
4 cups NSA chicken stock (or 2 cups stock and 2 cups water) Recipe
1. Saute' onions, spring onions, garlic, and chili peppers in stock until soft.
2. Add rice and cook, stirring constantly, until rice is light brown.
3. Add tomatoes, cilantro, and chili powder to mixture.
4. Add chicken stock and bring to a boil.
5. Reduce heat and simmer until liquid has evaporated. For brown rice, it may be 45 – 50 minutes. For white rice varieties 25 – 30 minutes.
