    Rice: Spinach Risotto

    List of Ingredients

    2 med onions finely chopped
    3 clove garlic crushed
    1 Tbl finely grated fresh lemon rind
    1 c mushroom sliced
    2 c Arborio rice (uncooked)
    6 c chicken stock (low sodium)
    1 c white wine
    1 1/2 c chopped spinach leaves
    2 T coarsely chopped fresh thyme

    Recipe

    Spray large pan with cooking spray. Cook onion, garlic, rind and mushrooms. Stir until mushrooms are browned lightly. Add rice, stock and wine, bring to boil. Simmer, covered 15 minutes, stirring midway through cooking. Remove from heat. Let stand, covered 10 minutes. Stir in spinach and thyme. Cover for 1 minute and serve. Makes 6 servings. Measure into 1/2 c. servings.
