Rice: Taco Rice w/ Beans

2 cup water
8 oz tomato sauce, no salt added
1 pkt taco seasoning mix (make own that is plan friendly)
1/2 cup red bell pepper
1/2 cup green pepper chopped
1/2 tsp oregano
1/8 tsp garlic powder
1 cup brown rice
16 oz pinto beans, canned, rinsed wellRecipe
In a medium saucepan, combine all ingredients, except rice & beans. Bring mixture to a boil over medium heat. Stir in rice and beans. When mixture boils again, stir, then reduce heat to medium-low, cover, and simmer until most of the liquid has cooked out, 45 minutes to 1 hour. Remove from heat, and set aside covered for 5 minutes. Mix well.

Taco Seasoning Mix
From member kkey22850: Enjoy. This replaces the Taco Seasoning Packets from Ortega, etc. This is my modification from an old Make A Mix Cookbook I’ve been using for more years than I want to admit to.
• 2 tsp onion powder
• 1 tsp Chef Paul’s Magic Salt Free Seasoning
• 1 tsp chili powder (adjust to the desired heat)
• ½ tsp crushed dried red pepper (adjust to the desired heat)
• ½ tsp instant garlic powder
• ¼ tsp dried oregano
• ½ tsp ground cumin
• ½ tsp turmeric
Combine all the spices. Use as you would those taco packets from the supermarket.
This will spice 1 lb. ground meat.
I usually brown the meat and 1 chopped onion. Add the spice mix and ½ c water.
On KP duty last weekend I cooked up a big batch, divided it into appropriate 1-serving size and froze it. Will use over shredded lettuce with chopped tomato and chopped onion as a taco salad. I tried this for my morning snack and it was tasty but some fresh salsa would have enhanced the .?experience
