List of Ingredients
2 tablespoons low salt chicken broth
2 tablespoons minced red onion
1 tablespoon minced fresh gingerroot
2 teaspoons minced lemongrass (optional)
1 jalapeno pepper, seeded and minced
1 teaspoon ground coriander
1/2 teaspoon ground turmeric
1 cup uncooked white rice
2 cups water
Recipe
Heat broth in a saucepan. Add the onion, gingerroot, lemongrass and jalapeno. Saute for 2 minutes. Add coriander and turmeric, and saute for 1 additional minute. Add rice and water. Bring to a boil, reduce heat, cover and simmer for 15 minutes, or until rice is tender. Serve at once.
