    Rice: Tomato-Onion Rice

    List of Ingredients

    2 1/2 cups low salt chicken broth
    1 medium onion, chopped
    3 cloves garlic, minced
    1 cup uncooked white rice
    3 medium tomatoes, chopped
    1 bay leaf
    1 teaspoon dried oregano

    Recipe

    Bring broth to a boil in a saucepan. Add onion, garlic, rice, tomatoes, bay leaf and oregano. Return to a boil, reduce heat, cover and simmer until rice is just tender, about 25 minutes. Drain. Remove bay leaf before serving.
