Rice: Vegetable Fried Rice

2 C. Broccoli
1/4 C. Chopped scallions
1 t. ginger
1 C. cooked brown rice
1/4 C. cooked chicken, cubed
1 t. garlic powder
1/4 C. bell pepper
6-8 mushrooms
2 egg whites
1 C. mixed frozen vegetables, thawed
Recipe
In a large, non-stick skillet, bring an inch of water to a boil. Add broccoli; steam covered until bright green and tender, about 5 minutes. Remove broccoli to a plate, set aside. Stir-fry scallions, ginger and garlic in water over medium-high heat until fragrant and slightly translucent, about one minute. Add pepper and mushroom and stir-fry 3-5 minutes. Then stir in thawed vegetables about 2 minutes. Pour in eggs and stir-fry until eggs begin to sit. Add brown rice, diced chicken and broccoli. Stir-fry 3 minutes. Serve.
